Molly’s Homemade Lentil Burgers
Ingredients
1 cup
dry lentils
2 cups water
1 cup breadcrumbs
2/3 cup wheat germ
1 small onion diced
1 Tbsp ground coriander
1 Tbsp olive oil
Rinse lentils, put in a small saucepan and cover with the 2 cups of water.
Bring to a boil let simmer for 20-30 minutes or until lentils are tender.
Drain remaining water and place lentils in a large bowl. Add remaining
ingredients (except olive oil). Using your hands mash the ingredients
until thoroughly mixed (have fun with it!). Form patties and cook in olive
oil in a skillet over low heat until brown on both sides.
Serve on buns with red onion, tomato or whatever combination of condiments
you enjoy.
Makes five patties. Lentil burger patties also freeze well.
