Sesame Orange Chicken

by
Jim Eaton

1 orange
2 tablespoons French mustard
2 tablespoons honey
1 teaspoon sesame oil
Salt and pepper to taste
8 boneless/skinless chicken thighs

Zest and juice the orange into a mixing bowl. Add the mustard, honey, sesame oil, salt and pepper. Stir until mixed. Pour the marinade into plastic bag with the chicken and refrigerate for 10-30 minutes or the amount of time it takes for your oven to heat to 450 degrees.

Line a baking sheet pan with foil and place a wire rack over the foil. Place the chicken on the rack, make sure you have some space between the pieces of chicken.

Bake for 25-35 minutes. If you don't have crispy charred edges, use the broiler for 5 minutes.

Note: this recipe is also great on chicken wings. There is enough marinade for 3-4 lbs of wings. You'll need two baking sheets and wire racks but it's well worth the effort!

Feel free to spice it up. Add a teaspoon of sambal or other chili paste for a bit of heat.
