Yvonne's Gourmet Shrimp Pizza
1 pizza crust ( I use
a Boboli )
1/3 cup pesto sauce
1 6 oz. jar of marinated artichokes
5 or 6 pieces of sundried
tomatoes
1 dozen or so cooked shrimp
1 wedge of Fontina cheese
Pine nuts for garnish
Old Bay seasoning
Preheat the oven to 450 degrees.
Shred the fontina cheese after removing
red wax edge. Cook shrimp in Old Bay seasoning if shrimp are raw and
run
under cold water. Cut shrimps into 3rds and sprinkle with Old Bay
Seasoning
until coated. Slice sundried tomatoes into small strips.
Spread pesto sauce on the
crest. Sprinkle half the fontina cheese and then
the sliced sundried tomatoes over the crust. Heat in the oven for
about
4 minutes or until the cheese melts. Remove from oven. Slice artichokes
into flat strips and place over the first layer. Sprinkle rest of
Fontina cheese
over the artichokes. Place the shrimp pieces across the pizza and
garnish
with pine nuts. Cook this for 4 minutes or until the second layer
of cheese
melts.
